2 Ingredient Fool proof Flatbread Recipe – I’m taking my coaching to the kitchen!

I figured we could all do with a little simplicity in our lives, so I thought to share with you this quite epic 2 ingredient, foolproof flatbread recipe, and you will probably be pretty surprised by the scrumptious results…

While I would love to get into some long bloggy story about this dish and its origins, I personally hate that, so I’m going to give you the goods first, and once you are comfort eating your way through this quite delectable flatbread, you can read more on what pearls of wisdom I might be imparting…

Ingredients:

  1. Cup Greek Yogurt (yes you read correctly!)
  2. Cups All Purpose Flour (I do gluten free flour, and it worked just as well)

Method:

  1. Mix all ingredients in a bowl until you get a dough consistency – You can add a pinch of salt if you would like, and probably even add sugar if you’re wanting more of a sweet, brunch vibe with a berries, cream and maple syrup fill. I haven’t tried that but gosh it sounds delicious!
  2. Separate into balls, you could probably get about 6-8 depending on how big or small you’re wanting each flatbread, and roll or press them into a round, flat shape, like a pita or mini-pizza, about half a centimeter (quarter inch) thick.
  3. In a non-stick frying pan, add a little slick of oil which gives it a crispy outer, and carefully add a flattened round to the pan to cook, turning over until brown on both sides. I suggest doing this one at a time – I’m guessing about 1-2 minutes per side, longer on the first side before flipping. I trust you to use your brilliant mind to gauge whether it’s right, and of course taste to see if its cooked all the way through. The thinner they are the quicker they will cook, although not too thin or they will just crumble apart. 

So what do you do with these flippen’ lekker flatbreads?? Well, anything really… you could mop up some delicious tomatoey sauce with a Melenzane, You could go Greek with tzatziki and flame grilled chicken, or lamb kebabs. As mentioned above, you could do a sweet version with berries, cream, and maple syrup. I’m sure you could do a breakfast variety with scrambled eggs and bacon. New York style pastrami beef and pickles, I mean the sky is the limit!!

The lesson in this is to play and have fun, to ignite your creativity to try something new, and to trust yourself that its just two ingredients. Sometimes, when life gets really overwhelming, it may help to remember that you’re the product of two ingredients, and perhaps it’s time to kneed and stretch yourself, put a fire under your ass, and fill yourself up with some of your favourite things while getting your hands dirty, devouring it all and enjoying with your friends!
